Designed as a dedicated experience in their own right, the masterclasses offer a three-part exploration of the expression of Chardonnay, the Maison's signature grape variety. Led by a Ruinart ambassador, they showcase three cuvées: Ruinart Blanc de Blancs, the embodiment of the Ruinart taste; Ruinart Blanc Singulier Edition 20, the result of the winemaking team’s expertise and a reflection of climate change, and Dom Ruinart Blanc de Blancs 2013, the quintessence of the Ruinart style, a vintage aged for more than 10 years under cork, combining complexity, depth and aromatic freshness.
These tastings are accompanied by three bites created by three-Michelin-starred chef Arnaud Donckele, designed to harmoniously complement the Maison's champagnes.

At the heart of Cheval Blanc Paris, the Ruinart Table takes its place in a garden designed as an evocation of the Maison's historic vineyard in Reims. Between lush vegetation, terroir and references to the gardens of 4 RUE DES CRAYÈRES, this setting invites guests to immerse themselves in a “vineyard-to-table” experience, bringing them closer to the living world of the vine.
In this setting, three-Michelin-starred chef Arnaud Donckele has created a seven-course gastronomic menu, conceived as a dialogue between the Champagne terroir, gastronomy and the House’s cuvées. The chef’s creations are paired with a selection of iconic cuvées and exceptional vintages, from Ruinart Blanc Singulier Édition 20 and Dom Ruinart Blanc de Blancs 2009 and Dom Ruinart Blanc de Blancs 2013 to Dom Ruinart Rosé 1996, alongside an exclusive cuvée.
An exceptional gastronomic experience, where each cuvée accompanies one of the seven courses, revealing in its own way the richness of the Champagne terroir and the Maison's savoir-faire.

Since 2023, three-Michelin-starred chef Arnaud Donckele, who leads the kitchens of two Cheval Blanc properties, has been working alongside Ruinart to explore the connections between champagne and gastronomy. For this second edition of La Table Ruinart x Cheval Blanc Paris, this conversation continues with a new dialogue between the Champagne vineyard and his cuisine.
At the heart of his approach is the sauce, treated as a creation in its own right. His knowledge of terroirs and technical mastery allow him to reveal ingredients in their original structure and create combinations with distinctive nuances. This approach resonates with the expression of the Champagne terroir, accompanying the House’s cuvées throughout this “vineyard-to-table” experience.
