Originally from Toulouse, Éric Guérin began his career at La Tour d’Argent before spending two years at Taillevent in Paris. After his military service, where he served as the private chef for Pierre Joxe at the Ministry of Defense, he joined the kitchen of Jules Verne, located on the second floor of the Eiffel Tower.
He then took over Auberge du Parc and opened La Mare aux Oiseaux. Éric Guérin is renowned for his subtle mastery of combining flavors from the land, sea, and marshes. His extensive travels, particularly to Morocco and Japan, have enriched his palate and knowledge of spices and subtle flavor pairings.
