PLANTATION

Planting a new vineyard plot has to happen before the end of May, after the soil has rested for at least a year and has been worked rigorously.

Only two years after planting, or after the third harvest, can grapes be harvested under the Champagne appellation.
Once the root of the vine (under the soil) and the graft (above the soil) are assembled, the plant is covered in wax. This will give it extra stability during the first couple of months.

FLORAL BUD STAGE

The buds, future flowers and then grape bunches, are starting to show in the vineyard. They are still agglomerated for now, but with a little help from the sun and time, they will continue to grow until the flower buds are completely separated right before flowering.

SUCKERING

We have started suckering in the vineyard. We remove the unnecessary shoots which grow on the vines and divert the flow of sap from the main buds.

Suckering is done in spring and is an important process, vital to the production of higher quality grapes and optimal use of the vine's energy.
