Did you know that there could be up to 1 million bubbles in a glass of champagne? The bubbles are what defines the personality and the identity of the champagne!
Unlike non-sparkling wines, champagne is privy to a second fermentation inside the bottle, which infuses the base wine with carbon dioxide. This however does not create the bubbles! Rather they appear once the cork is open and they come into contact with the small impurities you can find along the sides of your glass.
That is when the magic starts happening: fizzy, subtle, inspiring…The bubbles explode and reveal all the aromas of the champagne !
