Every year the first day of harvest is set by the CICV. This year, the first grapes of the Ruinart Maison will reach the pressoir on September 17th. Grapes are harvested at their optimal level of maturity, token of perpetual quality. Yet, each harvest is unique with a specific evolution of ripeness and a distinctive balance between sugar and acidity levels.
